The Paleo Penguin is an idea I have been contemplating for a long time. I have always loved to cook and bake. As a little kid, I was fortunate enough to have my mother and grandma there to guide me in the kitchen. Endless hours were spent in the kitchen making bread, cookies, cinnamon buns and other delectable treats.
Originally I wanted to create a cookbook. I realized that would require way too much research and writing before anything would be released into the real world. Instead, I opted for a website where I can let my creative juices flow on a weekly basis and reach other people with food and diet challenges.
Why call it The Paleo Penguin?
When I started to tell people about the site name, the most common reaction was, “Cute!” Besides being cute, there is meaning behind the name. My partner always calls me his penguin as a pet name due to the fact that I am short and walk slow. The paleo part is simply how I choose to eat in order to feel better.
Due to food allergies, I can only eat a very limited diet, which as it turns out is paleo. For you people that don’t know, according to Wikipedia a paleolithic diet is:
The Paleolithic diet, Paleo diet, caveman diet, or stone-age diet is a modern fad diet requiring the sole or predominant eating of foods presumed to have been available to humans during the Paleolithic era. My Food Allergies
I am allergic to eggs, beans, most nuts, dairy, mustard, wheat or gluten. Some of you may think it can’t be that bad if I eat something I shouldn’t. To sum it up, if I eat anything with a trace of eggs, beans or certain nuts, I pass out within a few minutes and have to sleep it off for about three hours.
Over the years I would sneak small amounts of dairy or wheat into my diet as the allergic reaction was not as bad. I would try and limit this to mostly treats and I didn’t know how badly it affected me until I committed and did Whole30 in January of this year. It was an eye opener. I will go into this more later.
I felt so good after the 30 days, I committed to a paleo diet right after and have been keeping at it since. Concerning paleo, you hear a lot of people talking about being compliant a hundred percent of the time. I would say I stick to this about 98% as I am only human.
Normal people on a paleo diet can at least have the eggs and nuts. On occasion, I will have some rice. The only time I have had rice in the last five months was on my birthday when we had Indian food.
I include corn in my diet once a week for taco night simply because it is something I am not allergic to. If I want something sweet, which is almost never now, I limit what I have to only 4 grams of sugar only so my sugar dragon doesn’t rear its ugly head.
If we go out on occasion and have a drink, I stick to gin and soda, thus keeping out the sugar. I have never been much of a drinker and didn’t even have one for the first three months of this year. My average is usually about two a month.
My Goal and Purpose
My goal with this blog, is to help other people feel better through eating good clean food and share my experiences and recipes with others. I plan on reviewing products, because lets face it, when you shell out like $10 for a pizza crust you can eat, it better be worth it. I would be more confident buying a new product if someone recommended it to me. If there is a product or recipe you want me to review, drop me a message on Facebook.
